Our Barrel Aged Chinato (pronounced key-NAH-toe) is a bold, elegant vermouth inspired by the traditional Italian Chinato, where wine, spirit, and botanicals come together in a marriage of richness and botanical depth.
Aromas of dried herbs, orange peel, cassia, and oak. The palate opens with a honeyed warmth, followed by assertive but balanced bitterness from Chinchona and burdock, framed by spice, tannin, and floral lift. Long, medicinal finish softened by the barrel. You’ll barely notice it’s 18% alcohol.
You may remember our Sparkling Chinato V1.0, a first of its kind. This Chinato V2.0 is the V1.0 base blend rested in barrel for an additional 40 months. The result is a deeply structured vermouth with layered bitterness, a mellow oak influence, and a long, bittersweet finish.
